At the request of my mother, I made my first traditional Christmas cake this year. Boy I was nervous, especially given that it had to sit in the oven for over four hours! All that time later and the cake was rescued:
There was enough goo left over for me to make a small cake myself too - and that went down well too.
I think I should bake more often!

I think Delia is a pretty safe bet. Although I have to say a couple of her icing recipes that I've tried were a bit dodgy.... Coffee icing made with mascarpone...yuk!
ReplyDeletemmm, I agree there, but I thought I couldn't go wrong with a basic chrissy cake recipe - and it worked out well!
